200g udon noodles

2 tablespoons chili oil (store-bought or homemade)

1 tablespoon soy sauce

1 teaspoon rice vinegar

1 teaspoon sesame oil

2 green onions, finely sliced

1 garlic clove, minced

1 teaspoon ginger, grated

1 tablespoon toasted sesame seeds

Fresh cilantro leaves for garnish (optional)

Optional protein: cooked shrimp, tofu, or edamame (about 100g)

Cook the Udon: Bring a large pot of water to a boil. Add the udon noodles and cook according to package instructions (typically about 3-4 minutes). Stir occasionally to prevent sticking.

    Make the Sauce: While the noodles are cooking, in a small bowl, combine the chili oil, soy sauce, rice vinegar, and sesame oil. Mix well and set aside.

      Sauté Aromatics: In a small frying pan, heat a drizzle of oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant but not browned.

        Combine: Once the udon noodles are cooked, drain them and return to the pot. Immediately add the sautéed garlic and ginger mixture to the noodles along with your sauce mix. Toss everything gently to ensure the noodles are well-coated.
