200g fresh udon noodles

3 tablespoons chili oil (adjust based on spice preference)

1 tablespoon soy sauce

1 teaspoon sesame oil

2 cloves garlic, minced

1 teaspoon ginger, grated

1 green onion, finely sliced (plus more for garnish)

1 cup mixed vegetables (e.g., bell peppers, carrots, and snap peas)

1 tablespoon toasted sesame seeds (optional)

Salt and pepper to taste

Fresh cilantro or basil for garnish (optional)

Instructions

Cook the Udon Noodles: In a large pot of boiling salted water, cook the udon noodles according to package instructions (about 2-3 minutes for fresh noodles). Once cooked, drain and rinse under cold water to prevent sticking.
