Ingredients

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 cup breadcrumbs

1 large egg

1 tsp salt

½ tsp black pepper

1 tsp Worcestershire sauce

1 can (10.5 oz) cream of mushroom soup

1 cup beef broth

2 cups frozen mixed vegetables (carrots, peas, corn)

2 cups mashed potatoes (prepared, either homemade or store-bought)

1 cup shredded cheddar cheese

Fresh parsley for garnish (optional)

Instructions

Preheat your oven to 350°F (175°C).

In a large bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, egg, salt, pepper, and Worcestershire sauce. Mix until all ingredients are well incorporated.

Form the mixture into oval patties, about ½ inch thick.

In a large skillet over medium-high heat, brown the patties on both sides (about 3-4 minutes per side). Remove from skillet and set aside.

In the same skillet, pour in the cream of mushroom soup and beef broth, stirring to combine. Bring to a gentle simmer.

Add the frozen mixed vegetables to the skillet and let cook for about 3 minutes, just until they begin to thaw.

In a greased 9x13 inch baking dish, layer the browned meat patties. Pour the soup and vegetable mixture evenly over the patties.

Spread the prepared mashed potatoes over the top of the meat and vegetable mixture, smoothing it out with a spatula.

Sprinkle the shredded cheddar cheese over the mashed potatoes.

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and slightly golden.

Remove from the oven and let it rest for a few minutes before serving. Garnish with fresh parsley if desired.
