Ingredients

2 medium apples (Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1 large egg

1/2 cup milk

1 teaspoon vanilla extract

1/4 cup powdered sugar (for dusting)

Oil for frying (vegetable or canola)

Instructions

Prepare the Apples: Start by peeling, coring, and dicing the apples into small cubes. Set aside.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt until well combined.

Combine Wet Ingredients: In a separate bowl, whisk together the egg, milk, and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples until evenly distributed.

Heat Oil: In a deep skillet or pot, heat about 2 inches of oil to 350°F (175°C). You can check the oil temperature with a thermometer or by dropping a small spoonful of batter into the oil; it should sizzle and rise to the surface.

Fry the Bites: Use a tablespoon or small cookie scoop to drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan. Fry in batches for 2-3 minutes on each side until golden brown and cooked through.

Drain Excess Oil: Remove the fritter bites from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

Finish and Serve: Dust the warm fritter bites with powdered sugar before serving. Enjoy them while they're fresh and warm!
