1 bell pepper, finely diced (red or green)

1 carrot, grated

1 cup water chestnuts, diced

1/4 cup soy sauce (or tamari for gluten-free)

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

1/4 teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper to taste

2 green onions, sliced for garnish

1 head of butter lettuce or iceberg lettuce, leaves separated

Prepare the Ingredients: Begin by prepping all your vegetables. Mince the garlic, grate the ginger, finely chop the onion and bell pepper, and grate the carrot. Dice the water chestnuts for added crunch.

    Cook the Beef: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the ground beef, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes. Drain any excess fat if necessary.
