For the Dumplings:

1 cup all-purpose flour

1/2 cup water

1/2 pound ground pork

2 green onions, finely chopped

1 teaspoon ginger, minced

2 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon chili paste (adjust to taste)

Salt and pepper to taste

For the Soup:

6 cups chicken broth

1 tablespoon soy sauce

1 tablespoon chili oil (adjust to taste)

1 carrot, julienned

1 cup bok choy, chopped

2 green onions, chopped (for garnish)

Fresh cilantro (for garnish)

Slices of red chili (for garnish, optional)

Instructions
 

Make the Dumpling Dough:

    In a bowl, combine the all-purpose flour and water. Knead until a smooth dough forms, then cover with a damp cloth and let it rest for 30 minutes.

      Prepare the Filling:

        In a separate mixing bowl, combine the ground pork, green onions, ginger, garlic, soy sauce, sesame oil, chili paste, salt, and pepper. Mix thoroughly until well combined.

          Form the Dumplings:

            After resting, roll the dough into a thin sheet and cut out circles (about 3 inches in diameter). Place a teaspoon of the pork mixture in the center of each circle. Fold over to form a half-moon shape and pinch the edges to seal tightly. Repeat with the remaining dough and filling.

              Make the Soup Base:

                In a large pot, bring the chicken broth to a boil. Add soy sauce and chili oil to taste.

                  Cook the Dumplings:

                    Carefully drop the dumplings into the boiling soup. Cook for about 5-7 minutes or until they float to the surface and the pork is fully cooked.

                      Add Vegetables:

                        Stir in the julienned carrots and chopped bok choy. Let them cook for an additional 3-4 minutes until tender.

                          Serve:
