Bacon Mac and Cheese

8 oz elbow macaroni

6 slices of thick-cut bacon, chopped

2 cups sharp cheddar cheese, grated

1 cup mozzarella cheese, grated

1/2 cup cream cheese, softened

2 cups whole milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

1/2 cup panko breadcrumbs

2 tbsp fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the macaroni according to package instructions until al dente. Drain and set aside.

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until it is crispy, about 5-7 minutes. Transfer the bacon to a plate lined with paper towels to drain excess fat. Leave about 2 tablespoons of bacon fat in the skillet for the next step.

      Make the Cheese Sauce: In the same skillet over medium heat, add the butter and let it melt. Stir in the flour and cook for about 2 minutes, whisking constantly until it's light golden and bubbly. Gradually pour in the milk, whisking continuously to avoid lumps.

        Season the Sauce: Add the garlic powder, onion powder, smoked paprika, salt, and pepper. Continue to whisk until the mixture thickens and begins to bubble, about 3-5 minutes.

          Add the Cheese: Lower the heat to low and stir in the cream cheese until melted. Gradually add the cheddar and mozzarella cheese, stirring until the cheeses are fully melted and the sauce is smooth.

            Combine Macaroni and Sauce: Add the cooked macaroni and crispy bacon to the cheese sauce, stirring until everything is well coated.

              Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased baking dish.

                Add the Topping: In a small bowl, combine the panko breadcrumbs with a tablespoon of melted butter. Sprinkle the breadcrumb mixture evenly over the mac and cheese.

                  Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the top is golden and crispy.

                    Serve: Remove from the oven and let it cool for a few minutes. Garnish with chopped parsley before serving.
