Baked Boursin Spaghetti Squash

Ingredients
  

1 medium spaghetti squash

8 oz Boursin cheese (herb & garlic or your favorite flavor)

1 cup cherry tomatoes, halved

1 cup baby spinach

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving (optional)

Instructions
 

Preheat the Oven:

    Preheat your oven to 400°F (200°C).

      Prepare the Spaghetti Squash:

        Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the inside with olive oil and season with salt and pepper.

          Roast the Squash:

            Place the squash halves cut side down on a baking sheet lined with parchment paper. Roast in the preheated oven for about 30-40 minutes, or until the flesh is tender and easily shredded with a fork.

              Sauté the Veggies:

                While the squash is roasting, heat the remaining olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Then, add the halved cherry tomatoes and baby spinach. Cook for about 3-4 minutes until the spinach wilts and the tomatoes soften. Season with Italian seasoning, salt, and pepper.

                  Combine Ingredients:

                    Once the spaghetti squash is done, use a fork to scrape the flesh into strands. In a large mixing bowl, combine the spaghetti squash strands, sautéed vegetables, and Boursin cheese. Mix until com-bined and the cheese is melted and creamy.

                      Bake Again:

                        Pour the mixture back into the halved squash shells. Return the filled squash to the oven and bake for an additional 10-15 minutes, or until heated through and slightly golden on top.

                          Serve:

                            Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves and serve with grated Parmesan cheese if desired.
