Baked Feta Pasta

200g (7 oz) of feta cheese

400g (14 oz) of cherry tomatoes

300g (10.5 oz) of pasta (penne or fusilli recommended)

4 cloves of garlic, minced

¼ cup of olive oil

1 teaspoon of dried oregano

½ teaspoon of red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baking Dish: In a medium-sized baking dish, place the feta cheese block in the center. Surround it with the cherry tomatoes.

      Add Ingredients: Drizzle the olive oil over the feta and tomatoes. Sprinkle the minced garlic, dried oregano, red pepper flakes (if using), and a good pinch of salt and pepper. Toss the tomatoes gently to coat them.

        Bake: Bake in the preheated oven for about 30 minutes, or until the tomatoes have burst and the feta is golden and soft.

          Cook the Pasta: While the feta and tomatoes are baking, cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Reserve about 1 cup of the pasta water before draining.

            Combine: Once the feta and tomatoes are done, remove them from the oven. Use a fork to mash the feta and tomatoes together, creating a creamy sauce.

              Mix in Pasta: Add the drained pasta to the baking dish and toss everything together. If the mixture is too thick, add reserved pasta water a little at a time until you reach the desired consistency.

                Serve: Garnish with freshly torn basil leaves and a generous sprinkle of grated Parmesan cheese. Enjoy your creamy and flavorful baked feta pasta!
