Ingredients

4 large russet potatoes

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

1 teaspoon onion powder

½ cup grated Parmesan cheese

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Potatoes: Wash and scrub the russet potatoes thoroughly. Pat them dry with a towel. Cut each potato in half lengthwise, then into wedges (about 6-8 wedges per potato).

Season the Wedges: In a large mixing bowl, combine the olive oil, minced garlic, dried oregano, paprika, onion powder, salt, and pepper. Add the potato wedges to the bowl and toss until they are well coated with the oil and garlic mixture.

Add Cheese: Sprinkle the grated Parmesan cheese over the seasoned potato wedges and toss again to ensure the cheese adheres to the wedges.

Arrange on Baking Sheet: Line a baking sheet with parchment paper (for easy cleanup) and spread the potato wedges out in a single layer, making sure they don’t overlap.

Bake: Place the baking sheet in the preheated oven and bake for about 30-35 minutes, flipping the wedges halfway through the cooking time until they are golden brown and crispy.

Garnish and Serve: Once the wedges are done baking, remove them from the oven and garnish with freshly chopped parsley. Serve hot with your favorite dipping sauce.
