Ingredients

4 medium russet potatoes

1/4 cup olive oil

4 cloves garlic, minced

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon paprika

1/2 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped

Optional: 1/2 teaspoon red pepper flakes

Instructions

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

Wash and scrub the potatoes thoroughly; peel them if desired. Cut each potato into wedges (about 6-8 wedges per potato).

In a large mixing bowl, combine the olive oil, minced garlic, salt, black pepper, paprika, and red pepper flakes (if using). Whisk to create a marinade.

Add the potato wedges to the bowl and toss them well until they are evenly coated in the garlic mixture.

Transfer the coated potato wedges onto the prepared baking sheet, spreading them out in a single layer for even baking.

Bake in the preheated oven for 25-30 minutes or until the wedges are golden brown and crispy, flipping them halfway through to ensure even cooking.

Remove the baking sheet from the oven and immediately sprinkle the hot potato wedges with grated Parmesan cheese.

Allow them to cool for a few minutes, then garnish with fresh chopped parsley before serving.
