  • 3 ripe bananas thoroughly mashed
  • cup unsalted butter melted
  • ½ cup granulated sugar
  • 1 large egg beaten
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking soda
  • a pinch of salt
  • 1 cup all-purpose flour
  • ½ cup packed brown sugar
  • 1 tablespoon ground cinnamon
  • ¼ cup chopped pecans or walnuts optional
  • ¼ cup cream cheese softened
  • ½ cup powdered sugar
  • 1 tablespoon milk

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  • In a large bowl, combine mashed bananas and melted butter until smooth.
  • Add granulated sugar, beaten egg, and vanilla extract, mixing until combined.
  • Sprinkle baking soda and salt, then fold in all-purpose flour until just incorporated.
  • In a separate bowl, mix brown sugar and ground cinnamon for the filling.
  • Pour half of the banana batter into the loaf pan and sprinkle half of the cinnamon filling on top.
  • Layer the remaining banana batter and top with the rest of the cinnamon mixture.
  • Gently swirl the batter and filling together with a knife.
  • Bake for 50-60 minutes until a toothpick comes out clean.
  • Cool in the pan for 10 minutes, then transfer to a wire rack.
  • Mix cream cheese, powdered sugar, and milk for frosting, then drizzle over the cooled loaf.
