Bananas Foster French Toast with Homemade Banana Bread

For the Banana Bread:

2 ripe bananas, mashed

1/3 cup melted butter

1 teaspoon vanilla extract

1 teaspoon baking soda

Pinch of salt

1 cup sugar

1 large egg, beaten

1 cup all-purpose flour

For the Bananas Foster Topping:

2 ripe bananas, sliced

1/4 cup unsalted butter

1/2 cup brown sugar

1/4 cup rum (or substitute with banana liqueur)

1 teaspoon vanilla extract

1/4 teaspoon cinnamon

For the French Toast:

4 thick slices of homemade banana bread (from the above recipe)

2 large eggs

1/2 cup milk

1 teaspoon vanilla extract

Pinch of salt

Butter for frying

Instructions
 

Make the Banana Bread:

    - Preheat your oven to 350°F (175°C). Grease a loaf pan.

      - In a mixing bowl, combine mashed bananas and melted butter. Mix well.

        - Stir in vanilla extract, baking soda, and salt.

          - Add sugar, beaten egg, and flour, mixing until just combined.

            - Pour the batter into the prepared loaf pan and bake for 60 minutes or until a toothpick inserted in the center comes out clean.

              - Allow to cool completely before slicing into thick slices.

                Prepare the Bananas Foster Topping:

                  - In a skillet over medium heat, melt the butter.

                    - Add brown sugar, stirring until melted and bubbly.

                      - Carefully add the rum (or banana liqueur) and ignite it to flambe. If unsure, skip the flambe and allow it to simmer for a minute.

                        - Stir in sliced bananas and vanilla extract, and cook for an additional 2-3 minutes until the bananas are coated and caramelized. Sprinkle with cinnamon, then set aside.

                          Make the French Toast:

                            - In a bowl, whisk together the eggs, milk, vanilla extract, and a pinch of salt.

                              - Heat a skillet or griddle over medium heat and add a little butter to coat the surface.

                                - Dip the slices of banana bread into the egg mixture, allowing them to soak for a few seconds on each side, then allow excess to drip off.

                                  - Cook the soaked bread on the skillet until golden brown, about 3-4 minutes per side.

                                    Assemble:

                                      - Plate the French toast and generously spoon the warm Bananas Foster topping over each slice.

                                        - Add a scoop of vanilla ice cream or whipped cream on top if desired for extra indulgence.
