For the Chicken:

1 lb boneless, skinless chicken thighs

1/2 cup buttermilk

1 cup Panko breadcrumbs

1/2 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

For the Bang Bang Sauce:

1/2 cup mayonnaise

2-3 tbsp sweet chili sauce (adjust for spice)

1-2 tsp Sriracha (adjust for heat)

1 tbsp lime juice

For the Bowl:

2 cups cooked jasmine rice or quinoa

1 cup shredded carrots

1 cup sliced cucumbers

1 avocado, sliced

1/4 cup chopped green onions

1/4 cup chopped cilantro

Lime wedges for serving

Instructions

Prep Chicken:

    - In a bowl, marinate the chicken thighs in buttermilk for at least 30 minutes or up to 2 hours in the refrigerator.

      Make Bang Bang Sauce:

          Coat Chicken:
