1 lb (450g) boneless, skinless chicken breasts

1 cup corn starch

2 large eggs, beaten

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

Salt and pepper to taste

Oil for frying

4 cups mixed greens (spinach, romaine, arugula)

1 cup cherry tomatoes, halved

1 avocado, sliced

1/4 cup green onions, sliced

Sesame seeds for garnish

Bang Bang Sauce:

1/2 cup mayonnaise

2-3 tbsp sweet chili sauce (adjust to taste)

1 tsp sriracha (or more for extra heat)

1 tsp lime juice

Instructions
 

Prepare the Chicken: Start by cutting the chicken breasts into bite-sized pieces. Season with salt and pepper.

    Breading Setup: Set up your breading station with three shallow bowls. Place corn starch in the first, beaten eggs in the second, and panko breadcrumbs mixed with garlic powder, onion powder, paprika, and a pinch of salt and pepper in the third.

      Bread the Chicken: Dredge each piece of chicken in corn starch, shaking off excess, then dip into the beaten eggs, and finally coat with the panko mixture. Ensure each piece is well-coated.
