1 lb (450g) chicken breast, cut into bite-sized pieces

1 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

Vegetable oil for frying

1 cup cooked jasmine rice

1 cup shredded carrots

1 cup sliced cucumbers

1 avocado, sliced

2 green onions, chopped

1/4 cup fresh cilantro, chopped

Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon lime juice

Instructions

Prepare the Chicken: In three separate bowls, place the flour in one, beaten eggs in the second, and panko breadcrumbs mixed with garlic powder, onion powder, paprika, salt, and pepper in the third.

    Coat the Chicken: Dip each chicken piece into the flour, shaking off excess, then into the eggs, and finally coat with the breadcrumb mixture. Ensure each piece is well-covered.

      Fry the Chicken: In a large skillet, heat about 1/2 inch of vegetable oil over medium heat. Once hot, add the chicken pieces in batches, frying until golden brown and cooked through, about 3-4 minutes per side. Drain on paper towels.

        Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Adjust spice level by adding more sriracha if desired.
