Ingredients
  

1 lb boneless, skinless chicken breasts

1 cup cornstarch

2 eggs, beaten

1 cup Panko breadcrumbs

Salt and pepper, to taste

2 tablespoons vegetable oil

1 cup cooked jasmine rice

1 cup shredded cabbage (green or purple)

1 carrot, julienned

1 avocado, sliced

3 green onions, sliced

Fresh cilantro, for garnish

For the Bang Bang Sauce:

1/2 cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon Sriracha (adjust for spice preference)

1 teaspoon lime juice

Salt, to taste

Instructions
 

Prepare the Chicken:

    - Season the chicken breasts with salt and pepper.

      - Dredge each piece in cornstarch, dip into the beaten eggs, then coat with Panko breadcrumbs until fully covered.

        Cook the Chicken:

          - In a large skillet, heat vegetable oil over medium-high heat.

            - Add the breaded chicken to the skillet and cook for 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F). Remove from skillet and let it rest before slicing.

              Make the Bang Bang Sauce:

                - In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, lime juice, and a pinch of salt until smooth. Adjust spice level as desired.

                  Assemble the Bowls:

                    - In each serving bowl, add a generous scoop of jasmine rice as the base.
