2 tbsp cornstarch

1/2 cup panko breadcrumbs

1/4 cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp sriracha (adjust to taste)

1 tbsp lime juice

2 cups cooked jasmine rice

1 cup broccoli florets, steamed

1 cup shredded carrots

1 avocado, sliced

2 green onions, chopped

Sesame seeds for garnish

Fresh cilantro for garnish

Instructions

Prepare the Chicken: In a medium bowl, toss the diced chicken breast with cornstarch until fully coated.

Bread the Chicken: Dip each piece of cornstarch-coated chicken into the panko breadcrumbs, ensuring an even coating.

Fry the Chicken: Heat a non-stick skillet over medium-high heat and add enough oil to cover the bottom. Once hot, add the breaded chicken pieces in batches, cooking for about 5-7 minutes until golden brown and cooked through. Remove the chicken and place it on a paper towel-lined plate to drain excess oil.

Make the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, and lime juice. Mix well until smooth.

Assemble the Bowls: In each serving bowl, start with a base of cooked jasmine rice. Top with steamed broccoli, shredded carrots, and sliced avocado.

Add Chicken: Place the crispy chicken pieces on top of the veggies.

Drizzle with Sauce: Generously drizzle the bang bang sauce over the chicken.

Garnish and Serve: Sprinkle sesame seeds and chopped green onions on top. Add fresh cilantro for a burst of flavor. Serve immediately and enjoy your tasty Bang Bang Chicken Bowls!
