1 cup pearl barley

4 cups water or vegetable broth

1 cup almond milk (or any milk of choice)

1 tablespoon maple syrup (or honey)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

Pinch of salt

Toppings: Fresh fruits (like banana, berries, or apple), nuts (almonds or walnuts), and a sprinkle of chia seeds

Instructions
 

Rinse the pearl barley under cold water until the water runs clear.

    In a large saucepan, bring the water or vegetable broth to a boil over high heat. Add the rinsed barley and a pinch of salt.

      Reduce heat to low, cover, and let it simmer for about 30-40 minutes, stirring occasionally, until the barley is tender and chewy.

        Once the barley is cooked, stir in the almond milk, maple syrup, vanilla extract, and cinnamon.

          Cook the mixture on low heat for an additional 5-10 minutes until creamy, stirring frequently. If the porridge gets too thick, add a little more almond milk to reach your desired consistency.

            Remove from heat and let it cool slightly.

              Serve warm in bowls and top with your favorite fruits, nuts, and a sprinkle of chia seeds. Enjoy your hearty barley porridge!
