Ingredients

2 cups cooked chicken, shredded

1 cup BBQ sauce (your favorite brand)

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 small red onion, thinly sliced

1 cup corn (canned or frozen)

1 tablespoon olive oil

4 large flour tortillas

Fresh cilantro, for garnish

Sour cream, for serving

Instructions

Prepare BBQ Chicken: In a medium bowl, mix the shredded chicken with the BBQ sauce until evenly coated. Set aside.

Cook Vegetables: Heat olive oil in a skillet over medium heat. Add sliced red onion and corn, sauté for about 3-4 minutes until tender.

Assemble Quesadillas: On one half of each tortilla, sprinkle a layer of mozzarella and cheddar cheese (about 1/4 cup). Add a generous portion of the BBQ chicken mixture and a few spoonfuls of the sautéed corn and onions. Top with another layer of cheese and fold the tortilla over.

Cook Quesadillas: In the same skillet over medium heat, place the folded quesadillas one at a time. Cook for about 3-4 minutes on each side or until the tortillas are golden brown and the cheese is melted.

Slice and Serve: Remove the quesadillas from the skillet, let them cool for a minute, then slice into wedges. Garnish with fresh cilantro and serve with sour cream on the side.
