Ingredients
  

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

1/4 cup BBQ sauce (homemade or store-bought)

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 medium red onion, cut into wedges

2 tablespoons olive oil

Salt and pepper, to taste

8 cups mixed greens (spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

1/2 cup corn (fresh or canned)

1/4 cup cilantro, chopped

Optional: crumbled feta cheese or avocado slices for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken cubes and BBQ sauce, mixing well to coat. Let it marinate for at least 30 minutes in the refrigerator (or up to 2 hours for more flavor).

    Preheat the Grill: Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

      Prepare the Skewers: Thread the marinated chicken, red bell pepper, yellow bell pepper, and red onion onto the skewers, alternating between the chicken and vegetables.

        Grill the Skewers: Grease the grill grates with olive oil. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks.

          Prepare the Salad Base: While the chicken skewers are grilling, assemble the salad. In a large bowl, combine the mixed greens, cherry tomatoes, corn, and chopped cilantro. Drizzle with olive oil, season with salt and pepper, and toss gently to combine.

            Serve: Once the skewers are done, remove them from the grill. Allow to cool slightly before carefully removing the chicken and veggies from the skewers (or serve them as is!). Place the salad on a large platter or individual plates, top with the grilled chicken skewers, and add feta cheese or avocado if desired.
