Beef Spring Rolls with Peanut Lime Sauce

For the Beef Spring Rolls:

1 lb ground beef

1 cup shredded cabbage

1 cup grated carrots

1/2 bell pepper, thinly sliced

2 green onions, chopped

2 cloves garlic, minced

1 tablespoon ginger, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 teaspoon sesame oil

Salt and pepper to taste

10-12 spring roll wrappers

Oil for frying

For the Peanut Lime Sauce:

1/2 cup creamy peanut butter

1 tablespoon soy sauce

2 tablespoons fresh lime juice

1 tablespoon honey or maple syrup

1 teaspoon sriracha (optional for heat)

Water, as needed to thin

Instructions
 

Prepare the Filling:

    - In a skillet over medium heat, add the ground beef and cook until browned. Drain excess fat.

      - Add minced garlic and ginger, and sauté for an additional 1-2 minutes until fragrant.

        - Stir in shredded cabbage, grated carrots, bell pepper, green onions, soy sauce, oyster sauce, sesame oil, salt, and pepper. Cook for another 3-4 minutes until the veggies are tender. Remove from heat and let cool slightly.

          Assemble the Spring Rolls:

            - Lay one spring roll wrapper on a clean surface with a corner facing you.

              - Spoon about 2-3 tablespoons of the beef filling onto the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Seal the edge with a bit of water. Repeat with remaining wrappers and filling.

                Fry the Spring Rolls:

                  - Heat oil in a deep frying pan over medium-high heat. Once hot, carefully add a few spring rolls at a time, frying until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

                    Make the Peanut Lime Sauce:

                      - In a bowl, whisk together peanut butter, soy sauce, lime juice, honey (or maple syrup), and sriracha if using. Add water, a little at a time, until the sauce reaches your desired consistency.

                        Serve:

                          - Arrange the crispy beef spring rolls on a platter and serve hot with the peanut lime sauce for dipping.
