1 medium onion, finely chopped

3 garlic cloves, minced

2 tablespoons red curry paste

1 can (400ml) coconut milk

4 cups vegetable or chicken broth

2 tablespoons soy sauce

1 tablespoon lime juice

1 teaspoon sugar

Salt and pepper to taste

Fresh cilantro for garnish

For the dumplings:

1 cup all-purpose flour

1 teaspoon salt

1/4 cup boiling water

1/2 cup cooked and seasoned ground chicken or tofu

2 green onions, finely chopped

1 teaspoon sesame oil

1 teaspoon soy sauce

Instructions

Prepare the Dumpling Dough: In a mixing bowl, combine the flour and salt. Gradually add the boiling water while stirring until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Make the Filling: In another bowl, mix the ground chicken or tofu, green onions, sesame oil, and soy sauce until well combined.

      Shape Dumplings: Take a small piece of dough (about the size of a golf ball) and roll it into a thin circle. Place a teaspoon of filling in the center, fold the dough over, and pinch to seal the dumpling tightly. Repeat until all filling is used.
