2 lbs boneless, skinless chicken thighs, cut into 1-inch cubes

1/4 cup soy sauce (low sodium preferred)

1/4 cup brown sugar

2 tbsp honey

2 tbsp rice vinegar

2 tbsp sesame oil

4 cloves garlic, minced

1 inch ginger, grated

1 tsp cornstarch mixed with 2 tbsp water (optional, for a thicker glaze)

1 tbsp sesame seeds (for garnish)

3 green onions, chopped (for garnish)

Wooden or metal skewers (if using wooden, soak them in water for at least 30 minutes)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together the soy sauce, brown sugar, honey, rice vinegar, sesame oil, garlic, and ginger. Add the chicken cubes to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for maximum flavor.

    Prepare the Grill: Preheat your grill to medium-high heat. If using wooden skewers, ensure they are soaked in water to prevent burning.

      Skewering the Chicken: Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece to allow even cooking.

        Grilling: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks.
