2 cups rice flour

1 cup coconut milk

1/2 cup sugar

1/2 cup water

1 tsp baking powder

1/4 tsp salt

1/4 cup melted butter (plus extra for greasing)

2 eggs

1/2 cup grated fresh coconut (optional)

1/4 cup cheese (preferably shredded salty cheese like Eden or queso de bola)

Banana leaves (for lining the pans; optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). If using banana leaves, soak them in warm water for about 10 minutes to soften and make them pliable. Line your baking dish with the banana leaves, allowing some overhang for easy removal after baking. Grease the leaves with melted butter. If you prefer not to use banana leaves, grease your baking dish directly.

    Mix Dry Ingredients: In a mixing bowl, whisk together the rice flour, baking powder, sugar, and salt until well-combined.

      Combine Wet Ingredients: In another bowl, whisk together the coconut milk, water, melted butter, and eggs until smooth.

        Combine Mixtures: Gradually pour the wet mixture into the dry mixture, stirring gently until fully combined. If you want to add grated fresh coconut, fold it gently into the batter.

          Pour and Top: Pour the batter into the prepared baking dish. Evenly sprinkle the shredded cheese over the top.

            Bake: Place the dish in the preheated oven and bake for about 25-30 minutes, or until the bibingka turns golden brown on top and a toothpick inserted into the center comes out clean.

              Serve: Once baked, remove from the oven and let it cool slightly. Serve warm, and enjoy it with additional grated coconut or a side of salted butter, if desired.
