2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1 tablespoon sugar

1/2 cup cold unsalted butter, cubed

3/4 cup buttermilk

For the Chorizo Gravy:

1/2 pound chorizo sausage, removed from casing

1 tablespoon olive oil (if needed)

1/4 cup all-purpose flour

2 cups whole milk (or more for desired thickness)

1 teaspoon paprika

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Make the Biscuits:

    - Preheat your oven to 425°F (220°C).

      - In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.

        - Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

          - Stir in the buttermilk until just combined. Be careful not to overmix.

              - Cut out biscuits using a floured biscuit cutter or glass and place them on a baking sheet lined with parchment paper.

                  Prepare the Chorizo Gravy:

                    - In a large skillet over medium heat, cook the chorizo until browned and crumbly, about 5-7 minutes. If chorizo is very lean, add olive oil as needed.

                      - Sprinkle in the 1/4 cup of flour and cook for 1 minute, stirring constantly, to create a roux.

                        - Gradually whisk in the milk, continuing to stir until the mixture thickens, about 5 minutes.

                          - Stir in the paprika, garlic powder, salt, and pepper. Adjust seasoning to taste. If the gravy becomes too thick, add more milk to reach your desired consistency.
