Black Pepper Chicken

Made with tender chicken thighs and a flavorful marinade of black pepper, soy sauce, and oyster sauce, this dish is a crowd-pleaser. Stir-fried with vibrant bell peppers and aromatic ginger and garlic, it's seasoned to perfection. Serve it over fluffy jasmine rice for a satisfying meal in just 25 minutes. Ingredients
  

500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black peppercorns, coarsely crushed

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon sesame oil

3 cloves garlic, minced

1-inch piece of ginger, grated

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

2 green onions, chopped (for garnish)

2 tablespoons vegetable oil

Cooked jasmine rice (for serving)

Instructions
 

In a mixing bowl, combine the chicken pieces, crushed black pepper, soy sauce, oyster sauce, cornstarch, and sesame oil. Mix well and let it marinate for at least 30 minutes for maximum flavor.

    Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken. Stir-fry for about 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

      In the same skillet, add the minced garlic and grated ginger, sauté for about 30 seconds until fragrant.

        Add sliced onions and bell peppers to the skillet. Stir-fry for 4-5 minutes until the vegetables are tender but still crisp.

          Return the chicken to the skillet and mix well with the vegetables. Cook for an additional 2-3 minutes, ensuring everything is well combined and heated through.

            Taste and adjust seasoning if needed. Remove from heat and garnish with chopped green onions before serving.

              Serve the Black Pepper Chicken over a bed of fragrant jasmine rice and enjoy the kick of flavors!
