When it comes to creating a dish that is not only flavorful but also succulent, boneless chicken thighs are the ultimate choice. Unlike chicken breasts, which can dry out easily, chicken thighs are known for their higher fat content, resulting in a juicy and tender texture. The dark meat of the thighs has a rich flavor that marries beautifully with the zesty spices we’ll be using in this recipe.

Ingredients

500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black pepper, coarsely ground

3 cloves garlic, minced

1-inch piece of ginger, grated

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

2 tablespoons vegetable oil

1 medium onion, sliced

1 bell pepper (any color), sliced

2 green onions, chopped (for garnish)

1 tablespoon cornstarch

Salt to taste

Instructions

Marinate the Chicken: In a bowl, combine the chicken pieces, black pepper, garlic, ginger, soy sauce, oyster sauce, sesame oil, and a pinch of salt. Mix well and let it marinate for at least 30 minutes (or overnight for deeper flavor).

Prepare the Cornstarch Coating: In a separate bowl, mix the marinated chicken with cornstarch until evenly coated. This will create a crispy texture when cooked.

Cook the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken and cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.

Add Vegetables: Add the sliced onion and bell pepper to the skillet. Stir-fry for an additional 3-4 minutes until the vegetables are tender but still firm.

Final Seasoning: Taste the dish and adjust the seasoning, adding more salt or black pepper as desired. Cook for another minute to combine flavors.

Serve: Remove from heat and garnish with chopped green onions. Serve hot with steamed rice, noodles, or your choice of side.
