  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter
  • 1 large egg
  • 1 teaspoon almond extract
  • ½ cup rolled oats
  • ½ teaspoon ground cinnamon

Instructions

  • Preheat the oven to 350°F (175°C) and prepare a 9x9 inch baking pan.
  • In a bowl, combine blackberries, ½ cup sugar, cornstarch, lemon juice, and vanilla extract.
  • In another bowl, whisk flour, baking powder, and salt together.
  • Cream softened butter with the remaining ½ cup sugar until light and fluffy.
  • Add egg and almond extract to the butter mixture and beat until smooth.
  • Gradually mix in the dry ingredients until a crumbly dough forms.
  • Press two-thirds of the dough into the bottom of the prepared pan.
  • Spread the blackberry mixture over the crust and crumble remaining dough on top.
  • Sprinkle rolled oats and cinnamon over the top layer.
  • Bake for 35-40 minutes until golden brown and filling is bubbling.
