Blueberry Cream Cheese French Toast Casserole

1 loaf of brioche or challah bread, cut into 1-inch cubes

8 oz cream cheese, softened

1 cup fresh blueberries (or frozen, thawed)

6 large eggs

2 cups milk

1/2 cup maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

Pinch of salt

Powdered sugar for dusting (optional)

Extra blueberries for topping (optional)

Instructions
 

Prepare the Bread: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish. Place the cubed brioche or challah bread evenly in the dish.

    Cream Cheese Mixture: In a mixing bowl, beat the softened cream cheese with a hand mixer until smooth. Gently fold in the fresh blueberries, trying to keep them intact.

      Layer the Cream Cheese: Drop spoonfuls of the cream cheese and blueberry mixture over the bread cubes. Use a spatula to gently spread it out without crushing the bread.

        Custard Mixture: In a separate large mixing bowl, whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, nutmeg, and a pinch of salt until well combined.

          Combine: Pour the custard mixture evenly over the bread and cream cheese mixture. Press down gently to ensure all bread cubes are soaked.

            Chill (Optional): For best results, cover the dish with foil or plastic wrap and let it sit in the refrigerator for at least 30 minutes or up to overnight. This helps the bread absorb the custard.
