Ingredients

1 ½ cups all-purpose flour

½ cup granulated sugar

½ teaspoon salt

2 teaspoons baking powder

½ teaspoon baking soda

1 large egg

½ cup buttermilk (or ½ cup milk + 1 tablespoon vinegar, let sit for 5 mins)

½ cup unsalted butter, melted and cooled

1 teaspoon vanilla extract

1 ½ cups fresh blueberries (or frozen, if out of season)

Zest of 1 lemon (optional, for extra flavor)

Extra sugar for sprinkling on top (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with butter or cooking spray.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, salt, baking powder, and baking soda until well combined.

Combine Wet Ingredients: In another bowl, beat the egg. Then add in the buttermilk, melted butter, vanilla extract, and lemon zest. Mix well until all the wet ingredients are fully incorporated.

Combine Mixtures: Pour the wet mixture into the dry ingredients and gently stir until just combined. Be careful not to overmix; it's okay if there are a few lumps.

Fold in Blueberries: Gently fold in the blueberries with a spatula, ensuring they are evenly distributed without smashing them.

Scoop into Muffin Tin: Using a scoop or spoon, divide the batter evenly among the muffin cups, filling each about ¾ full. If desired, sprinkle a little granulated sugar on top of each muffin for a sweet crust.

Bake: Bake in the preheated oven for about 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool: Remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: Serve warm or at room temperature. Enjoy these delightful blueberry muffins with butter or on their own!
