Butter Steak Bites with Garlic Herb Potatoes

For the Butter Steak Bites:

1 lb sirloin steak, cut into bite-sized cubes

Salt and pepper, to taste

2 tablespoons olive oil

4 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

1 tablespoon Worcestershire sauce

For the Garlic Herb Potatoes:

1 lb baby potatoes, halved

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes:

    - Preheat your oven to 400°F (200°C).

      - In a large bowl, combine the halved baby potatoes, olive oil, minced garlic, dried oregano, dried thyme, salt, and pepper. Toss to coat the potatoes evenly.

        - Spread the potatoes in a single layer on a baking sheet lined with parchment paper.

          - Bake for about 25-30 minutes or until they are golden brown and fork-tender, tossing halfway through cooking for even browning.

            Cook the Butter Steak Bites:

              - While the potatoes are baking, season the steak cubes with salt and pepper.

                - In a large skillet, heat the olive oil over medium-high heat. Add the steak bites in a single layer (you may need to work in batches).

                  - Sear the steak bites for about 2-3 minutes on each side until they develop a nice golden crust (adjust the cooking time for your desired doneness).

                    - Reduce heat to medium. Add butter, minced garlic, rosemary, thyme, and Worcestershire sauce to the pan. Stir to melt the butter and coat the steak bites in the garlic herb mixture. Cook for an additional minute until fragrant.
