  • 2 cups cheese tortellini
  • 1 pound boneless skinless chicken breasts, diced
  • 2 tablespoons Cajun seasoning
  • 3 tablespoons olive oil
  • 4 cloves garlic finely minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup cherry tomatoes halved
  • 1 cup fresh spinach leaves
  • ½ cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • Fresh parsley chopped, for garnish

Instructions

  • Cook the tortellini in salted boiling water until al dente, then drain and set aside.
  • Heat 2 tablespoons of olive oil in a skillet, season chicken with Cajun seasoning, salt, and pepper, and cook until no longer pink.
  • Remove the chicken from the skillet and set aside.
