2 cups rolled oats

2 cups almond milk (or any milk of choice)

2 apples, diced (Granny Smith or Honeycrisp work well)

1/2 cup brown sugar, packed

1/4 cup maple syrup

1/2 cup caramel sauce (plus extra for drizzling)

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup walnuts or pecans, chopped (optional)

1/2 cup raisins or dried cranberries (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish or line it with parchment paper for easy removal.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, brown sugar, cinnamon, nutmeg, and salt. If using, mix in the chopped nuts and dried fruits.

      Prepare Wet Ingredients: In another bowl, whisk together the almond milk, maple syrup, caramel sauce, and vanilla extract until well combined.

        Combine: Pour the wet mixture into the dry ingredients and stir until all the oats are well-coated. Fold in the diced apples evenly throughout the mixture.

          Bake: Transfer the oatmeal mixture to the prepared baking dish. Spread evenly, and use a spatula to flatten the surface. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the apples are tender.

            Cool & Serve: Allow the oatmeal bake to cool for about 10 minutes before cutting into squares. Serve warm, drizzled with additional caramel sauce for an extra treat!
