Carrot Apple Salad

Ingredients
  

2 large carrots, peeled and grated

1 large apple (Granny Smith or Honeycrisp), cored and grated

1/4 cup raisins or dried cranberries

1/4 cup walnuts or pecans, chopped

3 tablespoons plain yogurt or vegan yogurt

1 tablespoon honey or maple syrup

1 tablespoon lemon juice

1/2 teaspoon cinnamon

Salt and pepper to taste

Fresh parsley, for garnish (optional)

Instructions
 

In a large bowl, add the grated carrots and grated apple. Mix them gently to combine.

    Add the raisins (or dried cranberries) and chopped walnuts (or pecans) to the bowl.

      In a separate small bowl, whisk together the yogurt, honey (or maple syrup), lemon juice, cinnamon, salt, and pepper until smooth.

        Pour the dressing over the carrot and apple mixture and toss everything together until the salad is evenly coated.

          Taste and adjust seasoning if necessary. Add more honey/maple syrup or lemon juice as per your preference.

            Chill the salad in the refrigerator for at least 15-30 minutes to let the flavors meld together.

              Serve in a bowl and garnish with fresh parsley, if desired.
