Ingredients
  

  • 2 large carrots peeled and cut into chunks
  • 1 ripe mango peeled and diced into small pieces
  • 1 cup coconut water
  • 1 tablespoon freshly squeezed lime juice
  • 1 teaspoon honey or agave syrup optional for sweetness
  • a pinch of sea salt
  • fresh mint leaves for garnish
  • ice cubes

Instructions

  • Prepare the ingredients by peeling and chopping the carrots and mango.
  • Combine the chopped carrots, diced mango, coconut water, lime juice, honey, and sea salt in a blender.
  • Blend on high until smooth and creamy, adding more coconut water if needed.
  • Taste and adjust sweetness with more honey or agave syrup if desired.
  • Strain the mixture through a fine mesh sieve into a pitcher to remove pulp.
  • Pour the drink over ice cubes in chilled glasses.
