4 large russet potatoes, peeled and diced

6 strips of bacon, chopped

1 cup shredded sharp cheddar cheese

1 cup milk

4 large eggs

1/2 cup diced onion

1 bell pepper, diced (any color)

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh chives, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Bacon: In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and place it on paper towels to drain excess grease. Reserve about 1 tablespoon of bacon grease in the pan.

      Sauté Vegetables: In the same skillet with the reserved bacon grease, add the diced onion and bell pepper. Sauté for about 5 minutes, or until the vegetables are softened. Season with salt, pepper, garlic powder, and paprika.

        Prepare Potatoes: In a large mixing bowl, combine the diced potatoes with the sautéed vegetables and cooked bacon. Mix well to ensure everything is evenly distributed.

          Mix Eggs and Milk: In a separate bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.

            Combine Mixtures: Pour the egg mixture over the potato mixture, stirring gently to coat evenly. Transfer the mixture into a greased 9x13-inch baking dish.

              Add Cheese: Sprinkle the shredded cheddar cheese on top of the casserole.

                Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and the potatoes are tender.

                  Garnish and Serve: Once baked, remove the casserole from the oven and let it cool for a few minutes. Garnish with freshly chopped chives before serving.
