Cheesy Masala Beans on Toast

Ingredients
  

1 can (15 oz) of mixed beans (such as kidney, black, and pinto)

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1-2 green chilies, finely chopped (adjust to taste)

1 teaspoon ginger paste (or freshly grated ginger)

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon garam masala

1/4 teaspoon turmeric powder

Salt to taste

1/2 cup diced tomatoes (fresh or canned)

1/4 cup cream cheese or cottage cheese

1/2 cup shredded cheese (cheddar or mozzarella works well)

4 slices of your favorite bread (sourdough or whole grain recommended)

Fresh cilantro for garnish

Lemon wedges for serving

Instructions
 

Prepare the Beans: Drain and rinse the mixed beans thoroughly under cold water and set them aside.

    Sauté the Base: In a medium-sized pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes.

      Add Aromatics: Stir in the minced garlic, green chilies, and ginger paste. Sauté for another 2 minutes until fragrant.

        Spice It Up: Add the ground cumin, ground coriander, garam masala, turmeric powder, and salt. Cook for about 1 minute, stirring frequently, to bloom the spices.

          Mix in Tomatoes & Beans: Add the diced tomatoes and cooked mixed beans to the pan. Stir to combine and let it simmer for about 5-7 minutes, allowing the flavors to meld. Adjust seasoning if needed.

            Cheesy Bliss: Lower the heat and mix in the cream cheese until melted and well incorporated. Then, fold in the shredded cheese until it’s melted and creamy. Remove from heat.

              Toast the Bread: While the bean mixture is simmering, toast the slices of bread until golden brown.

                Assemble: Layer each slice of toast with a generous amount of the cheesy masala beans mixture.

                  Garnish & Serve: Top with freshly chopped cilantro and serve with lemon wedges on the side for a zesty finish.
