Chicken Alfredo Lasagna Rolls

12 lasagna noodles

2 cups cooked chicken, shredded

1 cup ricotta cheese

2 cups Alfredo sauce (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1 cup mozzarella cheese, shredded

1/2 cup Parmesan cheese, grated

Fresh parsley, chopped (for garnish)

Salt and pepper to taste

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Lasagna Noodles: In a large pot of boiling salted water, cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a parchment-lined baking sheet to cool.

      Prepare Filling: In a mixing bowl, combine the shredded chicken, ricotta cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.

        Assemble the Rolls: Spread 1/4 cup of Alfredo sauce on the bottom of a 9x13-inch baking dish. Take one lasagna noodle, spread about 2-3 tablespoons of the chicken mixture along the length of the noodle, then carefully roll the noodle up. Place the roll seam-side down in the baking dish. Repeat for all noodles.

          Add Sauce and Cheese: Once all rolls are in the dish, pour the remaining Alfredo sauce over the top. Sprinkle the mozzarella and Parmesan cheese evenly on top.

            Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Remove from the oven, let it cool for a few minutes, and garnish with fresh parsley before serving.
