2 boneless, skinless chicken breasts

1 ripe avocado, mashed

4 slices of whole grain bread

1 cup shredded mozzarella cheese

1 medium tomato, sliced

1/4 cup Greek yogurt or mayonnaise

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

Fresh cilantro or basil for garnish (optional)

Instructions

Cook the Chicken: Season the chicken breasts with garlic powder, onion powder, salt, and pepper. Heat olive oil in a skillet over medium heat and cook the chicken for about 6-7 minutes on each side or until fully cooked and no longer pink in the center. Remove from the skillet and let cool, then slice or shred the chicken.

    Prepare the Avocado Spread: In a small bowl, mix the mashed avocado with Greek yogurt or mayonnaise. Season with salt and pepper to taste. This will be your creamy avocado spread.

      Assemble the Sandwich: On two slices of whole grain bread, spread a generous amount of the avocado mixture. Layer on sliced tomatoes, followed by the cooked chicken. Top with shredded mozzarella cheese.
