Chicken Avocado Melt Sandwich

2 slices of sourdough bread

1 cup cooked chicken breast, shredded

1 ripe avocado, mashed

½ cup shredded mozzarella cheese

2 tbsp mayonnaise

1 tsp lime juice

1 small tomato, sliced

Salt and pepper to taste

1 tbsp olive oil or butter (for grilling)

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

In a bowl, mix the shredded chicken with mayonnaise, lime juice, salt, and pepper. Stir to combine well.

    In another bowl, mash the avocado and season with a pinch of salt.

      Heat a skillet over medium heat and add olive oil or butter.

        Assemble the sandwich: spread the mashed avocado on one slice of bread, top with the chicken mixture, add tomato slices, and sprinkle mozzarella cheese on top.

          Place the second slice of bread on top and press down gently.

            Once the skillet is hot, carefully place the sandwich in the pan. Grill for about 3-4 minutes on each side, or until golden brown and the cheese is melted.
