Chicken Parm Cottage Cheese Bowl

Ingredients
  

2 boneless, skinless chicken breasts

1 cup cottage cheese (preferably large curd)

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup whole wheat panko breadcrumbs

1 tsp Italian seasoning

1 tsp garlic powder

Salt and pepper to taste

Fresh basil leaves for garnish

Olive oil spray or a small amount of olive oil

Instructions
 

Preheat your oven to 375°F (190°C).

    In a shallow bowl, mix the panko breadcrumbs with garlic powder, Italian seasoning, and a pinch of salt and pepper.

      Pat chicken breasts dry with paper towels. Season both sides with salt and pepper.

        Lightly coat each chicken breast with olive oil, then dredge them in the seasoned panko mixture, ensuring they are fully coated.

          Place the coated chicken on a baking sheet lined with parchment paper. Bake for 25–30 minutes, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C).

            While the chicken is cooking, prepare the cottage cheese base. In a bowl, mix the cottage cheese with half of the Parmesan cheese and a sprinkle of salt and pepper. Set aside.

              In a saucepan, gently heat the marinara sauce over medium heat until warm.

                Once the chicken is done, remove it from the oven and let it rest for a few minutes. Slice the chicken into strips.

                  To assemble the bowls, start by adding a generous scoop of the cottage cheese mixture to each serving bowl.

                    Layer with warm marinara sauce, followed by the sliced chicken on top.

                      Sprinkle shredded mozzarella cheese and the remaining Parmesan cheese over the chicken.

                        Place the bowls under the broiler for 2–3 minutes until the cheese is melted and bubbly—watch closely to avoid burning.

                          Remove from the oven, garnish with fresh basil leaves, and serve immediately.
