2 packs of instant ramen noodles (discard seasoning packets)

1 lb (450 g) boneless chicken breast, thinly sliced

2 tbsp soy sauce

2 tbsp oyster sauce

1 tbsp sesame oil

1 cup bell peppers (sliced, mixed colors)

1 cup broccoli florets

1 carrot, julienned

2 green onions, chopped

3 cloves garlic, minced

1 thumb-sized piece of ginger, grated

Salt and pepper, to taste

2 tbsp vegetable oil

Toasted sesame seeds (for garnish)

Instructions
 

Prepare the Noodles: Boil a pot of water. Add the instant ramen noodles and cook until just soft (about 3-4 minutes). Drain and set aside.

    Marinate the Chicken: In a bowl, combine thinly sliced chicken with soy sauce, oyster sauce, and sesame oil. Toss to coat and let marinate for about 5 minutes.

      Heat the Pan: In a large non-stick skillet or wok, heat vegetable oil over medium-high heat.

        Cook the Chicken: Add the marinated chicken to the hot pan. Stir-fry for about 5-6 minutes or until fully cooked and golden brown. Remove the chicken from the pan and set aside.

          Sauté Vegetables: In the same skillet, add a bit more oil if needed. Stir in garlic and ginger, sautéing for about 30 seconds. Then add bell peppers, broccoli, and carrots. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
