1 lb ground beef (or turkey for a lighter option)

1 cup elbow macaroni

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies (undrained)

2 cups beef broth

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

1/4 cup chopped fresh cilantro (for garnish)

Sour cream (for serving, optional)

Instructions
 

Cook the Meat: In a large pot or Dutch oven, over medium heat, brown the ground beef until fully cooked and no longer pink. Drain excess fat if necessary.

    Add Seasonings: Stir in the chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper. Cook for 1-2 minutes until fragrant.

      Combine Ingredients: Add in the diced tomatoes with their juice, kidney beans, and beef broth. Stir until well combined.

        Cook the Pasta: Bring the mixture to a boil, then add the elbow macaroni. Reduce the heat to a simmer and cover the pot. Cook for about 10-12 minutes, or until the pasta is tender, stirring occasionally to prevent sticking.
