Chinese Beef and Broccoli

1 lb beef flank steak, sliced thinly against the grain

4 cups broccoli florets

2 tablespoons vegetable oil

3 cloves garlic, minced

1 inch piece of ginger, grated

1 tablespoon cornstarch

3 tablespoons soy sauce (low sodium preferred)

2 tablespoons oyster sauce

1 tablespoon rice vinegar

1 tablespoon brown sugar

1/2 cup beef broth

1 teaspoon sesame oil

Cooked jasmine rice for serving

Instructions

Marinate the Beef: In a bowl, mix the sliced beef with soy sauce, oyster sauce, garlic, ginger, brown sugar, and cornstarch. Let it marinate for at least 30 minutes to an hour for maximum flavor.

    Blanch the Broccoli: Bring a pot of salted water to a boil. Add in the broccoli florets and cook for about 2 minutes, just until bright green and slightly tender. Quickly transfer the broccoli to an ice bath to stop the cooking process, then drain and set aside.

      Stir-Fry the Beef: Heat a large wok or skillet over high heat and add vegetable oil. Once hot, add the marinated beef in a single layer (you may need to do this in batches). Stir-fry for about 2-3 minutes or until browned and cooked through. Remove the beef from the pan and set aside.

        Combine Ingredients: In the same wok, add a bit more oil if needed and toss in the blanched broccoli. Stir-fry for about 2 minutes. Return the beef to the pan.

          Make the Sauce: In a small bowl, whisk together beef broth, soy sauce, oyster sauce, rice vinegar, and sesame oil. Pour this sauce into the wok with the beef and broccoli. Stir everything together, making sure the sauce coats all the ingredients evenly. Cook for another 2-3 minutes until the sauce thickens slightly.
