Chinese Beef and Broccoli

1 lb (450g) flank steak, thinly sliced against the grain

4 cups broccoli florets

2 tbsp vegetable oil

3 cloves garlic, minced

1 inch ginger, grated

1/4 cup soy sauce

2 tbsp oyster sauce

1 tbsp cornstarch

1 tbsp water (for cornstarch slurry)

2 tbsp rice vinegar

1 tbsp brown sugar

1 tsp sesame oil

Cooked jasmine rice, for serving

Sesame seeds and chopped green onions, for garnish

Instructions

Marinate the Beef: In a bowl, combine the sliced flank steak with 2 tbsp soy sauce and 1 tbsp cornstarch. Mix well and let it marinate for at least 15 minutes.

    Prepare the Sauce: In a small bowl, mix together the remaining soy sauce, oyster sauce, rice vinegar, brown sugar, sesame oil, and water. Set the sauce aside.

      Blanch the Broccoli: In a pot of boiling water, blanch the broccoli florets for about 2 minutes until bright green and slightly tender. Remove and immediately transfer them to an ice bath to stop the cooking process. Drain and set aside.

        Stir-Fry the Beef: Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat. When the oil is shimmering, add the marinated beef in a single layer. Cook for 2-3 minutes until browned, flipping halfway through. Remove beef from the skillet and set aside.

          Aromatics and Broccoli: In the same skillet, add the remaining 1 tbsp of vegetable oil, then add the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant. Add the blanched broccoli and stir-fry for another 2 minutes.

            Combine Beef and Sauce: Return the cooked beef to the skillet with the broccoli. Pour the prepared sauce over the mixture and stir well to coat everything evenly. Cook for another 2-3 minutes, allowing the sauce to thicken slightly and coats the beef and broccoli.

              Serve: Remove from heat and serve immediately over cooked jasmine rice. Garnish with sesame seeds and chopped green onions.
