Chinese Beef and Onion Stir-Fry

1 lb (450g) sirloin beef, thinly sliced against the grain

2 medium yellow onions, thinly sliced

3 garlic cloves, minced

1-inch piece ginger, grated

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 teaspoon sesame oil

1 bell pepper (any color), sliced

2 green onions, chopped (for garnish)

Salt and pepper to taste

Optional: Red chili flakes (for heat)

Instructions
 

Marinate the Beef: In a bowl, combine sliced beef with soy sauce, oyster sauce, and cornstarch. Mix well and let it marinate for at least 15 minutes to enhance the flavor and tenderness.

    Prepare the Cookware: Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat until it's hot but not smoking.

      Stir-Fry the Beef: Add the marinated beef to the wok and stir-fry for about 2-3 minutes until the beef is browned but not fully cooked. Remove the beef from the wok and set aside.

        Sauté Aromatics: In the same wok, add the remaining tablespoon of vegetable oil. Add minced garlic and grated ginger, and stir-fry for about 30 seconds, or until fragrant.

          Cook the Onions and Peppers: Add the sliced onions and bell pepper to the wok. Stir-fry for about 4-5 minutes until the onions become translucent and slightly caramelized.

            Combine Ingredients: Return the beef to the wok. Add sesame oil and mix all the ingredients well. Season with salt, pepper, and red chili flakes if you like some heat. Stir-fry everything together for another 2-3 minutes or until the beef is cooked through.

              Garnish and Serve: Remove the wok from the heat and sprinkle chopped green onions on top. Serve your delicious beef and onion stir-fry over steamed rice or noodles.
