  • 200 g dark chocolate finely chopped
  • 3 large eggs separated into yolks and whites
  • 100 g granulated sugar divided
  • 300 ml heavy cream chilled

Instructions

  • Melt the dark chocolate in a heatproof bowl over simmering water, stirring until smooth.
  • Whisk egg yolks with half of the sugar until pale and fluffy.
  • Mix the melted chocolate and vanilla extract into the egg yolk mixture.
  • Whip the chilled cream until soft peaks form.
  • Whisk egg whites with salt until soft peaks form, then add remaining sugar until glossy.
  • Fold whipped cream into the chocolate mixture, then gently fold in the egg whites.
  • Pour the mixture into a lined loaf pan and smooth the top.
  • Cover and freeze for at least 6 hours until set.
