Ingredients
  

  • 1 cup water
  • ½ cup unsalted butter
  • 1 tablespoon granulated sugar
  • ¼ teaspoon salt
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • as needed oil for frying vegetable or canola
  • ½ cup granulated sugar for coating
  • 1 tablespoon ground cinnamon

Instructions

  • In a medium-sized saucepan, combine the water, unsalted butter, granulated sugar, and salt. Heat until boiling.
  • Remove from heat and stir in the all-purpose flour until a cohesive dough forms.
  • Allow the dough to cool for 5 minutes, then add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract until smooth.
  • Heat 2 inches of oil in a deep pot to 350°F (175°C).
  • Mix granulated sugar and ground cinnamon in a shallow bowl for coating.
  • Fill a piping bag with churro dough and pipe small shapes into the hot oil.
  • Fry for 2-3 minutes until golden brown, turning occasionally.
  • Remove churro bites with a slotted spoon and drain on paper towels.
  • Roll warm churro bites in the cinnamon sugar mixture and serve immediately.
