Cinnamon Sugar French Toast Muffins

6 cups of day-old bread (like French or brioche), cut into 1-inch cubes

6 large eggs

1 ½ cups whole milk

½ cup granulated sugar

1 tablespoon vanilla extract

1 ½ teaspoons ground cinnamon

½ teaspoon nutmeg

½ teaspoon salt

½ cup unsalted butter, melted

⅓ cup brown sugar

1 tablespoon ground cinnamon (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with cooking spray or butter.

    Prepare the Bread: In a large mixing bowl, combine the cubed bread pieces with the 1 tablespoon of ground cinnamon and 1/3 cup of brown sugar. Toss them together gently to evenly coat the bread.

      Make the Egg Mixture: In another bowl, whisk together the eggs, whole milk, granulated sugar, vanilla extract, 1 ½ teaspoons of cinnamon, nutmeg, and salt until well combined.

        Combine: Pour the egg mixture over the bread cubes, gently folding until all the bread is soaked. Let it sit for about 10 minutes to absorb the egg mixture, allowing the bread to soak up all that delicious flavor.

          Fill Muffin Tin: Using a spoon, fill each muffin cup with the soaked bread mixture, packing it down slightly. Drizzle the melted butter evenly over the top of each muffin.

            Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.

              Cinnamon Sugar Topping: While the muffins are baking, mix together the remaining 1 tablespoon of cinnamon and ¼ cup of granulated sugar in a small bowl.

                Coat the Muffins: Once the muffins are done baking, remove them from the oven and allow them to cool for 5 minutes. Carefully remove the muffins from the tin. While still warm, coat the tops of each muffin in the cinnamon sugar mixture.

                  Serve: Allow the muffins to cool slightly before serving, then enjoy with a drizzle of maple syrup or a dusting of powdered sugar, if desired.
