4 cups day-old bread, cut into small cubes (such as brioche or challah)

4 large eggs

1 cup milk

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 tablespoon vanilla extract

1 tablespoon ground cinnamon

1/2 teaspoon salt

1/2 cup unsalted butter, melted

1/2 cup powdered sugar (for dusting, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with cooking spray or butter.

    Prepare the Bread: In a large mixing bowl, combine the cubed bread with melted butter and toss until all the pieces are well coated. Let them sit for a few minutes to absorb some of the butter.

      Make the Egg Mixture: In a separate bowl, whisk together the eggs, milk, granulated sugar, brown sugar, vanilla extract, ground cinnamon, and salt until fully combined and smooth.

        Combine Ingredients: Pour the egg mixture over the bread cubes, gently folding the mixture until all the bread is soaked evenly. Let it rest for about 10-15 minutes to allow the bread to soak up the liquid.

          Fill Muffin Tin: Divide the soaked bread mixture evenly among the muffin cups, filling each cup about 3/4 full.
