4 cups fresh peaches, peeled and sliced

1 cup granulated sugar, divided

1 teaspoon ground cinnamon

1 tablespoon fresh lemon juice

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

1 teaspoon ground nutmeg (optional)

Whipped cream or vanilla ice cream (for serving)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the sliced peaches, 1/2 cup of sugar, cinnamon, and lemon juice. Stir until the peaches are well coated, and let sit for about 10 minutes to allow the juices to develop.

      In another bowl, whisk together the flour, baking powder, salt, and remaining 1/2 cup of sugar.

        Slowly stir in the milk, melted butter, and vanilla extract until just combined. The batter will be somewhat lumpy—this is okay!

          In a 9x13 inch baking dish, pour the batter evenly over the bottom. Do not stir.

            Carefully spoon the peach mixture over the batter, spreading it out evenly. The batter will rise to create a delicious topping as it bakes.

              Optional: sprinkle nutmeg over the top for added flavor.

                Bake in the preheated oven for 40-50 minutes or until the cobbler is golden brown and the peaches are bubbly.

                  Once done, remove from the oven and let cool for about 10 minutes.

                    Serve warm, topped with whipped cream or vanilla ice cream for the ultimate treat. Enjoy!
