  • 1 large egg yolk
  • 3-4 tablespoons cold water
  • 1 cup cottage cheese
  • ½ cup crushed chocolate sandwich cookies
  • 1 tablespoon vanilla extract
  • 2 tablespoons honey or maple syrup
  • 1 egg for egg wash
  • extra crushed cookies for garnish optional

Instructions

  • In a large mixing bowl, whisk together the flour, powdered sugar, and salt.
  • Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
  • In a small bowl, whisk the egg yolk with cold water and gradually add to the flour mixture.
  • Shape the dough into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • In a medium bowl, combine cottage cheese, crushed cookies, vanilla extract, and honey or maple syrup.
  • Preheat the oven to 375°F (190°C) and roll out the chilled dough to ⅛-inch thickness.
  • Cut out circles of dough and place a tablespoon of filling in the center of each.
  • Fold the dough over to create a half-moon shape and seal the edges.
  • Brush the tops with beaten egg and sprinkle with crushed cookies if desired.
