Ingredients
  

1 cup cottage cheese (low-fat or full-fat)

1 medium cucumber, diced

1/4 red onion, finely chopped

1/4 cup cherry tomatoes, halved

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 tablespoon lemon juice

1 tablespoon olive oil

Salt and pepper to taste

Optional: 1/4 cup feta cheese, crumbled, for added flavor

Optional: Mixed greens for serving

Instructions
 

In a mixing bowl, combine the cottage cheese, diced cucumber, red onion, and cherry tomatoes.

    Sprinkle in the fresh dill, and pour in the lemon juice and olive oil. Mix gently until all ingredients are well combined.

      Season the salad with salt and pepper to taste. If using feta cheese, fold it in gently at this stage.

        Allow the salad to sit for about 10 minutes to let the flavors meld together.

          Serve chilled or at room temperature either on its own or over a bed of mixed greens.
