  • 1 tablespoon olive oil
  • 1 medium onion finely diced
  • 3 cloves garlic minced
  • 1 medium bell pepper diced
  • 1 medium zucchini diced
  • 1 cup corn kernels
  • 1 can 15 oz black beans, rinsed and drained
  • 1 can 14.5 oz diced tomatoes, with juices
  • 1 can 4 oz diced green chilies
  • 4 cups vegetable broth
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • 1 juice lime
  • to taste fresh cilantro chopped
  • to serve tortilla chips
  • to taste diced avocado
  • optional shredded cheese

Instructions

  • Heat the olive oil in a skillet over medium heat and sauté the diced onion for 3-4 minutes until translucent.
  • Add the minced garlic and diced bell pepper, cooking for another 2-3 minutes until the pepper softens.
  • Transfer the sautéed mixture to the crockpot and add the diced zucchini, corn, black beans, diced tomatoes, green chilies, and vegetable broth.
  • Sprinkle in the ground cumin, chili powder, smoked paprika, and season with salt and pepper, stirring to combine.
  • Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.
  • Stir in the fresh lime juice 15 minutes before serving to enhance the flavor.
