Creamy Broccoli and Chicken Penne

8 oz penne pasta

2 cups broccoli florets

1 lb boneless, skinless chicken breasts, diced

2 tbsp olive oil

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

1/4 tsp red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. During the last 2 minutes of cooking, add the broccoli florets to the pot. Drain and set aside.

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt, black pepper, and oregano. Cook for about 6-8 minutes or until the chicken is cooked through and golden brown.

      Add Garlic: Once the chicken is cooked, add the minced garlic to the skillet and sauté for about 1 minute until fragrant.

        Make the Sauce: Pour in the chicken broth and bring it to a simmer. Allow it to reduce by half, which should take about 3-4 minutes. Then, reduce the heat to low and stir in the heavy cream. Let it cook for an additional 2-3 minutes.

          Combine Ingredients: Gradually whisk in the grated Parmesan cheese until melted and smooth. If you desire a little heat, add red pepper flakes at this stage. Add the cooked penne and broccoli to the skillet, tossing everything together until well-coated in the creamy sauce.

            Serve: Remove the skillet from heat and serve warm, garnished with fresh parsley and an extra sprinkle of Parmesan cheese if desired.
